High Protein Zucchini Tortilla
Looking for a tortilla that can stand alone as a snack...look no further. This high protein recipe is sure to add some spice and everything nice to your next meal.

Ok guys if you know me I am always trying to get my clients...or me to get more protein in! it's not as easy as it seems especially considering how important protein is as we age, the integrity of the muscle we have and the muscle we want to build.

Adding more protein into my day can sometimes feel like a chore. So instead of adding more to my plate - it is easier to replace the things I eat with higher protein options. Another trick is to add high protein options to my snacks. This ensures that I am getting the protein I need.
Why not just replace your regular tortilla with this option. You can add this as a base for a salad at lunch or as a stand alone breakfast or snack. Top it with more veggies or chicken. The options are as endless as your imagination.

Spanish Zucchini Tortilla
Gluten Free, Dairy Free, Meal Prep/Freezer Friendly, High Protein

INGREDIENTS
1 tbsp. olive oil
1 small potato, peeled, chopped
1 small onion, chopped
½ small zucchini, thinly sliced
6 eggs
DIRECTIONS:
1.Heat oil in a non-stick pan and sear the potato and onion over medium-high heat, for about 4 minutes. Next, add the zucchini and sauté for another 4 minutes.
2.In a bowl, whisk eggs and season with salt and pepper. Transfer the vegetables from the pan into the bowl and mix well.
3.Using the same pan, add the egg mixture on low heat and make sure everything is evenly distributed. After about 3 minutes, run a spatula through the outer edges of the tortilla to make sure it does not stick to the pan.
4.After 8-10 minutes, flip the tortilla (this might take more or less, depending on heat, size and pan), using a plate over the pan. Slide the uncooked part back into the pan.
5.After another 5-6 mi
nutes, the tortilla should be cooked. Remove from heat and serve.
