Revamp your Holiday Leftovers

We are in the midst of the holiday season but our big dinners are, for the most part, behind us. If your family is anything like mine, we have leftovers for days. I don’t know about you, I get bored of eating the same thing over and over so I am always trying to transform my Christmas dinner into something fresh and exciting and limit food waste as much as possible.
Here are a few ideas on how to revamp your meals. Let your imagination fly with these ideas.
Breakfast.
Repurpose your eggs. Add shredded turkey and left over veggies into your scrambled eggs, try these for size sweet potatoes cooked with egg
Overnight oats - sweet potato addition. If your sweet potatoes are not salted then this is a cool way to add them in. sweet potato apple pie overnight oats.pdf
Sweet potato smoothie. This might sound gross to some but don’t knock it until you try it. The sweetness from yams allows you to skip out on the fruit, you can still add your protein powder to up that protein. Add more water or milk to get your desired consistency.
Reshape mashed potatoes into patties and fry them in a pan with eggs
Breakfast burritos with leftover turkey
Lunch:
Quesadilla. Instead of chicken, use turkey and any other leftovers that you might have. I also like to be daring and put a bit of cranberry sauce for some added flavour.
Paninis: load up on turkey, stuffing and cranberry sauce add some feta cheese and grill until warm. YUM or try this

Dinner:
Soups:Dont let anything go to waste by using the carcass of the turkey to make your own broth. see recipe here.
Casseroles.: take your turkey, veggies ,potatoes and make them into a delicious noodle bake or casserole.
Pizza - Make your own pizza! Turkey, arugula, cranberry sauce, onion with goat cheese. Buy the dough if you are looking for a quick meal option.
