GINGERBREAD CHIA PUDDING

This Christmas treat is a delight. Not only because its delicious but also because you are getting in good quality ingredients TOO!!!

I am always on the look out for easy, very easy and healthy recipes to add into my repertoire. This spin on chia pudding is no exception. I love the texture that the chia seeds provide in any pudding and the spin on this flavour brings the taste of Christmas to the tip of your tongue.

Chia seeds are little power houses. They are full of soluble fibre which can help lower cholesterol, mange blood glucose levels and help us feel more satiated.

INGREDIENTS:

1/4 cup chia seeds

1/4 tsp ground ginger

1/4 tsp ground cinnamon

1 1/2 cups almond milk

1 tbsp maple syrup

1/4 cup pomegranate seeds for topping: cacao nibs , coconut flakes


DIRECTIONS

1. In a bowl combine chia seeds, ground ginger and cinnamon.

2. Pour in almond milk and maple syrup. Whisk to combine.

3. Let sit for 5 minutes and whisk again to remove any clumps.

4. Cover and place in fridge for at least 30 minutes to set (the longer you wait the thicker it will become. See notes below).

5. Remove chia pudding from fridge and whisk again. 6. Pour into two cups and top with pomegranate seeds. Sprinkle with cacao nibs and coconut flakes.
